The coast highway along the French Riviera offers some really incredible cycling. Just be sure to visit before July or after August to avoid the huge crowds and traffic.

Heading out of Toulon, some parts of the highway turn into an expressway. There are side routes, however, and some parts have a Class I bike path.
Approaching Cannes from the west, the road goes through great bicycling territory.
TGV running on the conventional tracks along the coast.
Continuing past Nice, towards the Italian border.
Monaco. By the way, getting a good cup of coffee isn't always easy in France. However, a nice day ride is to head out of Menton towards Italy, grab a cappuccino, and then head back.
